This is a special we did a little while ago that was pretty popular.  A sweet omelette is a great option for brunch, with a tasty balance of sweet & savoury... enjoy!


  • 3 Eggs

  • 1 Tablespoon Cinnamon Sugar

  • 1/2 Cup Granola (or you can use any favourite Cereal, or crumble some Cookies)

  • 1/3 Cup Berry Compote or sliced fresh fruit (quick Berry Compote recipe here)

  • 1/3 Cup Greek Yoghurt

  • 2 Tablespoons Maple Syrup


  • Beat 3 eggs, and the Cinnamon Sugar in a small bowl until combined

  • Drizzle or spray some cooking oil in a medium frypan (20cm or so), over medium heat and pour the egg mix in

  • Move mixture around until omelette is cooked through to your liking

  • Place omelette onto your plate, and layer your toppings on one half– granola, then Greek yoghurt, top with compote or fresh fruit – and fold over

  • Drizzle maple syrup evenly over the top
